Menu Monday
One thing I’m in love with about my new blog design is that there’s just more space for all of the things that we do as moms. While I truly love creating with my children, it’s not all that I do (as much as they wish that it were!) or all that I am. There’s a bit more space to share the mommy-ing, homekeeping side of life (and I can go back to one blog rather than juggling two!).
I’m making an effort to try a few new recipes every week and it’s been a big success! It started as a way to use up random items from the freezer and pantry, but everyone has been appreciating what seems like extra effort at dinnertime (in reality I’ve been picking super-simple recipes and meal prep is still taking under 30 minutes!)

I’ve been relying heavily on three new additions to my cookbook library (’library’ makes it sound so much bigger than it really is!):
Rachael Ray’s Big Orange Book which, in spite of my intense dislike of Rachael Ray, has simple recipes that the kids really like and daddio thinks took a lot of extra effort.
The Best 30-Minute Recipe, from the editors of Cook’s Illustrated (who also put out my favorite go-to cookbook of all time, The New Best Recipe
). The recipes are more traditional but are without question the best version (they test the recipe over and over in the test kitchen until it’s perfect).
Everyday Food: Great Food Fast, from the people at Martha Stewart. I love the fact that it’s organized by season which somehow just really suits me. The recipes are very healthful and tasty, but so quick.
Anyhow, my plans for this week (which should be sunny, so we’ll be eating out on the patio!):
m - Baked ravioli casserole, big salad. (so simple! I’ll post this recipe later in the week!).
t - Pork chops on the grill, roasted potatoes, fruit salad.
w - Costco rotisserie chicken sliced over big salad, homemade ciabatta bread [Artisan Bread in Five Minutes a Day]
t - Burgers on the grill, fruit salad, roasted potatoes.
f - Homemade pizza (caramelized onions, black olives, zucchini, and tomatoes on a honey whole-wheat crust).
s - Chicken salad sandwiches, sweet potato fries [Everyday Food: Great Food Fast]
s - Snack-os (more homemade bread, apples, cheeses, ham, etc) while we watch Star Trek. We’re mildly dorky like that.

I think the new look is great! I, too, love Rachel Ray's Big Orange Book! I get the Everyday Food magazine and there are some really simple ones in there too!
I love the "snack-os". We do that a lot around here, and it's by far everyone's favorite. We just didn't know what to call it.
